Sundara’s master mixologists show there’s more than one way to take a history lesson, with crave-worthy cocktails inspired by Indonesia’s journey to independence. The classics are given a sustainable local twist, like the Kelapa Negroni which is aged in an old coconut whose hair has been pulled out and slow-smoked in the Kopa oven before being infused into the liquor for at least two weeks.
Alongside home infusions of premium imported liquors, the bar team are passionate about changing perception of Bali’s traditional arak. Enjoy a 100% pure arak cocktail, claypot-aged and infused with locally-grown fruits and herbs. Or discover our selection of Zero Waste cocktails made with home-grown ingredients including fruits and herbs from on-site gardens, and sustainable bar operations that minimise waste and prioritise environmentally-conscious suppliers. Guests can even do a Zero Waste cocktail class at Telu, a dedicated venue for workshops and intimate cocktail parties that was made from 100% upcycled furniture and materials.
