Rooted in his Swedish reverence for the sea and love of Indonesia’s aromatic spices, Chef de Cuisine David Gavin brings over 15 years of fine dining experience to this intimate journey. The Chef’s Table honours Jimbaran’s fishing village heritage through a curated mixed seafood experience, paired with hyper-local ingredients and refined techniques.
Each dish highlights the natural flavours of the ocean, thoughtfully crafted into a seamless dialogue between land and sea, memory and flame, with elegance and sustainability at its core.
The experience begins with a welcome gathering inclusive of aperitif and canapés at TELU from 6:00 pm - 6:45 pm. Guests will then proceed to Sundara via buggy for the Chef’s Table dinner, commencing at 7:00 pm and concluding at 9:00 pm.
