Rooted in his Swedish reverence for the sea and love of Indonesia’s aromatic spices, Chef de Cuisine David Gavin brings over 15 years of fine dining experience to this intimate journey. Chef’s Table honours Jimbaran’s fishing village heritage through a curated mixed seafood experience, paired with hyper-local ingredients and refined techniques. Each dish highlights the natural flavours of the ocean, thoughtfully crafted into a seamless dialogue between land and sea, memory and flame, with elegance and sustainability at its core.

The fire driven seven course degustation menu at Sundara celebrates the art of cooking over flame, featuring delicately smoked seafood and expertly charred premium meats. Guests can choose between signature mains; Gianyar baby pig or Kediri duck, reimagined with refined Balinese authentic flavours. Sundara now presents a refined dining experience inspired by the life circle of fire, expressed through thoughtfully curated two- or three-course menus. Each dish is crafted with elemental techniques, highlighting bold flavours, gentle smokiness, and the natural essence of premium ingredients. Set against the backdrop of Jimbaran Bay, the experience transitions seamlessly from golden hour to evening, where ocean views, warm ambiance, and elevated service come together for a more intentional and immersive culinary journey.
